  • New Chef de Cuisine named for Hoku's

Honolulu, HI -- Jeremy Shigekane was named Chef de Cuisine for the award-winning Hoku's restaurant at The Kahala Hotel & Resort effective August 7 in an announcement by the hotel's Food and Beverage Director, Todd Oldham. He reports to Executive Chef Wayne Hirabayashi and is responsible for menu selection and the day-to-day preparation of the cuisine while overseeing the culinary staff under his direction in the restaurant.

Shigekane came to The Kahala after a stint as Chef de Cuisine for another notable Honolulu restaurant, Chai's Island Bistro at Aloha Tower Marketplace. Previously, he served as Sous Chef at Fulton in New York City; and before that as a Line Cook for The Oak Room at The Plaza Hotel in New York City. He has also worked at Bouley and Café Gray, both in New York City.
Shigekane attended the California Culinary Academy from 1999 until 2001, and has held other positions in fine cuisine preparation for The Ritz-Carlton in Half Moon Bay, California; John's Island Club in Vero Beach, Florida; Citarella the Restaurant in New York City; and Hawthorne Lane in San Francisco, California.

Hoku's offers panoramic ocean views, a stadium kitchen, and an experienced culinary team. The fine dining restaurant is known for putting a contemporary Asian twist on the fresh imaginative foods of the Pacific. One of Zagat's Top 10 Hawaii restaurants and voted Chef's Choice Award (2011), Best Hotel Restaurant (2010) and Silver Award-winner for Best Brunch (2010) in Honolulu Magazine's Hale ‘Aina Awards, Hoku's winning combination of great food and impeccable service earns notice from all corners year after year. Specialties include crisped whole island fish, salt-crusted Colorado rack of lamb, and Hoku's signature ahi musubi appetizer. Hoku's serves dinner Wednesday through Sunday from 5:30 until 10 p.m.; Sunday Brunch is offered from 10 a.m. until 2 p.m.

Shigekane will be directly involved in coordinating Hoku's Chef's Table Grand Dining Experience events which are offered periodically throughout the year.
