Rich Bread Doughs (CULN3085)

Your next step in exploration of bakery goods, you will learn how to make rich doughs, i.e., lots of butter, sugar, and yeast to make things fluffy and tasty. In this class you learn how to make cinnamon rolls, sweet bread, sticky buns, and local favorite malasadas.

Filipino Foods by Chef Rob Vasquez (CULN3079)

Chef Rob Vasquez of Mama's Boys Food: The people who call the Philippines home come from 18 regions and 81 provisions across 7,107 islands. This diversity is reflected in language, culture, and especially in food. There are some quintessential Filipino dishes that have emerged in mainstream America. You will learn how to cook Pork Tenderloin Bicol Express, Chicken Adobo, and Pancit Canton.

Artisan Breads (CULN3086)

The first step in any good artisan bread is making a preferment, the mixture of flour, water, and yeast that will be the kick started to give your dough its shape and provide more complex flavor. This class will teach you how to make any array of artisan breads and pan breads using a variety of flours.
