    Cooking Classes and Culinary Camps
    The Culinary Institute of the Pacific at Diamond Head and the Office of Continuing Education and Training have teamed up to offer the best quality cooking classes in the best cooking facility in the Pacific.

    If the kitchen has always been your favorite room in your home, then you should up your skills with a cooking class. Our class instructors are committed to delivering world-class instruction in all types of cuisine.

    Condiments and Preserves
    When there is an abundance of fresh produce, have you ever wondered, “what can I make with this to enjoy it for a longer period of time”? Well, Chef Grant will show you how to make some basic and delicious condiments and preserves, triple citrus marmalade, onion jam, pickled cauliflower and carrots, and spiced grape tomatoes. They make the perfect homemade holiday gift for friends and family.

    Cooking Local Easy Sushi
    Learn to make popular local sushi favorites (Inari, Makizushi, Chirashizushi). Chef Grant Sato will guide the class in various aspects of the cooking process for these three popular sushi.

    Culinary Summer Camp for Teens!
    Whether learning to cook at home or going away to college, this week-long class will have something for students at all skill levels.
    KCC Chef Alan Tsuchiyama will be teaching students fundamental cooking principles and techniques. Every day, students will tackle new dishes and techniques. Students will also learn proper kitchen safety and sanitation practices. Kitchen tools and equipment will be provided. A visit to a Lo’i or sustainable food source will be included. A waiver release will be required. Please email the Program Coordinator, Susan Kazama, at smurata@hawaii.edu of any food allergies in advance.

    Kids Bake Off, Ages 7-9
    Kids 7-9 years old can make mini loaf cakes and cookies! Kids will be able to mix and bake off mini loaf cakes with toppings such as streusel and icings, and simple cookies.

    Sushi in its many forms has become an easy quick grab and go modern meal. Chef Grant will teach you the next level of sushi basics, from cooking and seasoning the rice, preparing assorted fillings or toppings, and finally putting them all together for combination rolls, beautiful temarizushi, and basic nigirizushi.

    Culinary Camp for Teens
    Baking Camp for Kids
    Know a student of high school age (13-18 years old) who is interested in cooking? Whether it is learning to keep the kitchen safe, caring about good food sanitation practices, basic knife skills, and sustainable cooking practices, this week-long class will have something for young people at all skill levels. Our chef will be teaching students fundamental cooking principles and techniques. Students will also visit a farm and learn ancient Hawaiian techniques for making Pa’i’ai. You will learn how to prepare it as a versatile and sustainable food source. The chef will assist in arranging a special menu that students will help prepare, and a special dessert at the end. Kitchen tools will be provided.
    The Culinary Camps for Teens is offered during the summer months.

    As a safety precaution, participants in all culinary classes are required to wear covered, non-slip shoes (e.g. athletic shoes) and comfortable long pants. Aprons or any other personal items may also be brought to class. The college will not be held responsible if such items are lost or stolen.
